Pan-fried eggs with Whitebaits

Ingredients:

250g whitebaits
3 eggs
1 tbsp minced garlic
1 tbsp chopped spring onion
some chilli shreds

Seasonings:

2 tsp light soy sauce
1/2 tsp saltpinch of pepper

Method:
  • Rinse whitebaits and set aside to dry. Beat eggs and blend in Seasonings and beat evenly.
  • Heat up 3 tablespoons of oil and fry minced garlic till fragrant. Add in whitebaits and fry briefly till the whitebaits turn white. Pour in beaten egg and mix well. Turn over and fry till cooked. Dish out.
  • Scatter chopped spring onion and chilli shreds then serve.
