Chinese Glutionous Rice Kueh

Ingredeients A:

150g glutinous rice
60ml coconut milk
1/3 tsp salt
a few drops of green food colouring

Ingredients B:

200ml water
2 pieces pandan leaves
80g palm sugar

Ingredients C:

150ml coconut milk
2 tsp sifted green bean flour
200g durian pulp pureed
20g sifted rice flour
2 tsp sifted custard powder
1 egg

Method:
  1. Ingredients A; Combine all ingredients, mix well and steam for 20 minutes. Remove and spoon mixture into small cups till 70 % full, pressing lightly to compact. Set aside.
  2. Ingredients B: Combine and boil all ingredients till reduced to 120ml. Strain.
  3. Ingredients C: Combine all ingredients and mix well. Add mixture from Step 2, stir well and pour mixture into small cups of glutinous rice in Step 1. Arrange cups on steamer rack and steam over high heat for 20 minutes. Remove and let cool.
