Sour Cream and Cheddar Potatoes

Ingredients:



1 pound potatoes, pared, diced and parboiled

1/2 pound cheddar cheese, grated

4 tablespoons butter, melted

1 onion, grated or chopped chives or scallions for nice color

1 cup sour cream

1/4 teaspoon pepper

1/2 teaspoon salt



Method:



Mix all ingredients together, turn into a casserole dish, bake uncovered at 350F for 45 minutes
