250g hard butter
100g sugar
1 egg
500g plain flour
50g ground almond, toasted
Filling ingredients:
300ml water
130g demarar sugar
50g corn flour
3 green apples
1/2 tsp cinnamon powder
50g raisin
Method:
- Grease a 9 inches pie dish.
- Cream butter and sugar at medium speed for about 15 minutes until fluffy.
- Add in egg, flour and ground almond.
- Roll out half of the pastry to fit into the pie dish and half bake for 15 minutes at 180°C .
Filling method:
- Peel and core apples and cut into cubes.
- Boil half of the water with demarar sugar and sugar.
- Mix corn flour into the other half of the water and pour into the sugar solution and cook until thick.
- Add in apples, raisin and cinnamon powder and stir well.
- Place filling on top of the half-baked pastry shell and cover the filling with remaining pastry.
- Prick holes with a fork and brush with egg yolk and bake at 160°C until golden brown on lower rack, about 20-25 minutes.
