Steamed Rice Pudding

Batter Ingredients:

350g sifted rice flour

40g sifted tapioca flour


20g wheat starch


600ml water


750ml boiling water


1 tsp salt



Topping ingredients:



150g chopped salted turnip (chai por)


1 tbsp minced garlic



Seasoning


3 tsp light soy sauce


1 tsp pepper


2 tsp sugar



Method:



  1. Batter: Blend rice flour, tapioca flour, wheat starch and salt with water till smooth. Pour in boiling water, mix well and pour into small cups greased with oil. Arrange cups on steamer tray and steam over high heat for 10 minutes. Remove and let cool.
  2. Heat 2 tablespoon oil in wok. Stir-fry garlic till fragrant. Add chopped turnip (radish) along with seasoning and stir-fry till fragrant. Keep warm on low heat.
  3. Serve rice pudding topped with radish topping.

Ingredients

* 1/4 cup Rice
* 1/2 cup Water
* 1/4 cup Cream
* 3/4 cup Milk
* 1 1/2 tablespoons Sugar
* 1 pinch Salt (Optional)
* 1/2 teaspoon Natural vanilla essence (Optional)

Instructions
Bring water to the boil in a small saucepan and add rice. Reduce heat, cover and simmer for about 10 minutes, stirring occasionally.

Stir in salt, cream, milk and sugar. Simmer uncovered for about 30 minutes, stirring occasionally.

When mixture has thickened and rice is tender, stir in vanilla.
