Pumpkin soup


1 k Red pumpkin
Spring onion , cut into 6 pieces
6 cups Thin cream
a little mint leaves , cut finely
1/4 cups cream for garnishing
6 cups chicken stock
2 tsp sugar
pepper powder
1 sliced tomato
a few drops of angostra bitters

Method :
  • Cut pumpkin into small pieces.Boil pumpkin in a vessel with a cup of water.
  • Cover the vessel with a lid and boil till the pumpkin is soft and strain.
  • Mix stock with pumpkin water, salt, pepper powder, onion and cook for 10 minutes.Mix well and strain the contents.Let it cool and serve in separate glasses.
  • Garnish with tomato slice and mint leaves.Press cream, through a tube, over the soup, in a star shape and serve it cold.
