Dumpling

Ingredients:

Rice Ingredients
600g glutinous rice
200g black-eyed beans
1tbsp garlic
Shallops

Seasoning
4 thsps dark soy sauce
1 tbsp light soy sauce
1 tsp spice power
1/2 tsp salt
2 tsp sugar

Filling
80g black mushrooms
500g pork
150g shallots
2thsps garlic

Filling Seasoning
2 thsp dark soy sauce
3 tbsp sugar
1 tsp spice powder

Wrapper
60 pieces bamboo leaves
some grass strings

Method:
Rice

Soak glutinous rice in water for 3 hours. Soak black-eyed beans for 3 hours. Fry shallots and garlic until light brown. Add glutinous rice and black-eyed beans. Add seasoning and fry. Set aside.

Filling

Fry shallots til golden brown. Set aside. Fry garlic, add pork, mushrooms and seasoning. Add shallots. Set aside.

Wrapper

Fold bamboo leaves into a cone shape. Add 2 tbsps of glutinuus rice mixture, some filling and top with 2 more thsps of rice. Add fried shallots. Set aside.

Cooking method:

Place dumplings into boiling water, boil over high heat for 30 minutes. Turn to low heat and boil for 3 hours.
