Chinese Pancake

Starter Ingredients:

100g sifted plain flour
140ml water
1/2 tsp dry yeast

Batter ingredients:

100g sifted plain flour
100g shifted bread flour
1 egg
250ml water
40g sugar
1/4 tsp baking powder
1/4 tsp alkaline water

Peanut filling ingredients:

200g peanuts, roasted and ground coarsely
20g sugar

Method:

  1. For starter: Combine all starter ingredients and mix well. Set aside for 1 hour.
  2. For Batter: Put all batter ingredients in mixer, add starter and mix well. Set aside for 45 minutes to proof.
  3. For peanut filling: Combine peanuts with sugar and mix well. Set aside.
  4. Heat flat-bottomed frying pan till hot ( no oil needed). Slowly pour in 1-2 tablespoon batter and let it spread out into a pancake.
  5. When surface of pancake is set, sprinkle with peanut filling. Combine to cook till surface of pancake is dry. Fold pancake into half to form half moon shape.
