Melon and Shredded Ham Soup


1 (600g) piece Chinese winter melon or use cucumbers
100g ham
5 cup chicken stock
1 tbsp finely sliced ginger
2 tbsp finely sliced spring onion
1½ tbsp light soy sauce

  • Peel the melon. Cut into thin slices and then into 4cm cubes. Slice the ham into long thin strips.
  • Place stock in a medium pan and bring to the boil. Reduce heat to simmering and add the melon, ginger, spring onion and soy sauce. Simmer 2 minutes until melon is tender. Add ham to soup, simmer 1 minute until warmed through.
  • Serve immediately.
