Blueberry Muffins

Ingredients:


1/2 c Butter

1 c Sugar

2 Eggs

2 c Flour

2 ts Baking powder

1/2 ts Salt

1/2 c Milk

1 ts Vanilla

2 c Blueberries, divided

Sugar mixed with cinnamon, for topping

Method:

  1. Cream together butter and sugar. Add eggs, one at a time; mix until blended.
  2. Sift together the flour, baking powder, and salt; add alternately with milk and vanilla.
  3. Mash 1/2 cup blueberries; stir into batter. Add remaining whole berries. Grease muffin tins. Pile batter high.
  4. Sprinkle with sugar/cinnamon topping.
  5. Bake at 375 degrees F. for 30 to 35 minutes.

Ingredients

* 2 cups Self-Raising Flour
* 1/2 cup Castor Sugar
* 1/3 cup Canola oil
* 2 Eggs
* 1 cup Sour Cream (substitute Lite)
* 1 cup Blue berries (fresh or frozen)

Instructions
Preheat oven to 170degC. Grease california size (large) muffin pans (6 to a pan) and line with patty pans (large).
Mix together eggs, cream and oil. Sift flour and sugar together. Mix until JUST COMBINED, all ingredients except blueberries. Add blueberries on top of batter. Spoon into muffin pans.
Bake for 35 minutes or until they are looking too good to resist any longer. Cool in pan for 5 minutes and enjoy hot.

Ingredients

* WET MIX
* 2 cups Grated raw apple (Granny smith)
* 1/2 cup Brown Sugar
* 1/2 cup Vegetable Oil
* 2 Eggs
* 1 teaspoon Vanilla Essence
* DRY MIX
* 1 cup Wholemeal Self Raising Flour
* 1 cup Self-Raising Flour
* 1/4 teaspoon Bi-Carb Soda
* 2 teaspoon Cinnamon

Instructions
Preheat oven 200deg
Thoroughly combine wet mix ingredients.
Combine dry mix ingredients and mix thoroughly into the wet mix. Place mixture into prepared muffins cups and bake for 20mins in 200deg oven.
