Portuguese Style Chicken


1/2 chicken
600g potatoes
1/2 onion
1/3 carrot
2 cloves shallot, grated
2 tsps curry powder
1/2 cup evaporated milk


pinch of pepper
1 tbsp light soy sauce
1 tsp cornflour


1/2 tsp salt
1/2 tsp granulated sugar
1 1/2 cups water


  1. Wash. cut chicken into chunks and marinate.
  2. Peel and thickly slice potatoes. Skin and cut the onion into chunks.
  3. Peel, thickly slice and cook carrot in boiling water for 10 minutes.
  4. In the inner pot heat 2 tbsps of oil. Stir fry shallot and curry powder until fragrant. Put into chicken, onion and potatoes, and stir fry for a while. Add carrot and seasoning, bring to the boil and cook for 5 minutes. Transfer the inner pot to the outer one and cook for 45 minutes. Take out the inner pot, pour in evaporated milk and bring to boil again.
