Mango Pudding


250ml water
20g gelatin
85g sugar
50g ice cubes
350ml mango syrup
1/2 tsp mango essence
150g mango ice cream
125g whipped cream
150g mango, cut into cubes

  1. Boil the water in a pot, add in gelatine and sugar and mix till they melt.
  2. After turning off the fire, pour the solution into a container. Thereafter, add in 50g ice cubes and mix till they melt.
  3. After cooling, add in mango syrup , mango essence , mango ice cream and whipped cream before mixing in the mango cubes.
  4. Pour into models and place in the fridge to solidify.

Tip: If you can't get mango syrup you can self made by blending mango cubes.
