Curry Puff

Dough ingredients:

100g soft butter
1 tsp salt
2 eggs
400g water
850g plain flour
150g bread flour
600g pastry margarine

Filling ingredients:

1 1/2 kg potatoes
4 large onions
100g curry powder
1 tsp vesop
1 tsp salt
cooking oil

Filling method:
  1. Boil potatoes until cooked and peel off the skin and mash them.
  2. Heat cooking oil and add in onions, curry powder and mashed potatoes.
  3. Add seasoning to taste.

Dough method:

  1. Mix alll of the ingredients except flours and pastry margarine and beat at medium speed for about 2 minutes. Add in the plain flour and bread flour and beat to a smooth dough. Leave aside for 10 minutes.
  2. Roll into a flat dough and put the pastry margarine in the centre and fold over the edges of the dough.
  3. Roll into a flat and thin dough and fold into three layers. (repeat the same process three times).
  4. Cut into round shapes and brush with water at one side, put the curry filling in the centre and seal the edges.
  5. Brush the top with egg and bake at 200°C on the middle rack, until golden brown for about 15-20 minutes.
