Pumpkin Chip Cookies

Makes 10 dozens

Ingredients:

1-1/2 cups butter (no substitutions) softened
2 cups packed brown sugar
1 cup sugar
1 can (15 oz) solid pack pumpkin
1 egg
1 tspn vanilla extract
4 cups all-purpose flour
2 cups quick-cooking oats
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
2 cups (12 oz) semisweet chocolate chips or pieces

Method:



  1. In large mixing bowl, cream butter and sugars. Beat in the pumpkin, egg, and vanilla.

  2. Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture.

  3. Stir in chocolate. Drop by tablespoonfuls 2 in. apart on ungreased baking sheets.

  4. Bake at 350°F (180°C) for 10-12 mins or until lightly browned. Remove to wire racks to cool.
